Love at First Sight in Vieux-Lille

When was the last time you experienced something for the very first time in your life? We’re talking about an emotion — a real emotion that hits you like a revelation. For us it was only this past June at the new restaurant Le St-Jo, where our taste buds first met with the out-of-this-world cooking of Chef Nicolas Pourcheresse. To get a true feeling for the restaurant, we let the chef choose our meal for us. At Le St-Jo you must let yourself be guided, because it is the chef, and only the chef, who decides what you will be eating, depending on his impulse, his inspiration, his mood, and of course, the local farmer’s market. Put your faith in him, order the “Carte Blanche” and you will be captivated by your meal. A series of delectable dishes were brought out in succession for us to taste, and we were completely bowled over. This chef does not play games: he serves only the best. He’s instinctive, unpredictable, audacious. Mixing up cooking styles and unexpected flavours, Pourcheresse uses all natural produce that he transforms into taste sensations. Time after time we enjoyed a mix of subtle flavours: melon sorbet lightly freshens candied aubergines, turmeric adds a flavourful twist to fresh muscles, slices of foie gras gently caress courgette flowers, and raw sardines add a zing to oysters sprinkled with fresh hazelnut. Other flavours are more intense: lovage enhances the taste of lightly cooked bonito tuna, orange zest adds a kick to Caesar Mushrooms, and fresh vervain enlivens panna cotta mixed with pan-fried Mirabelle plumbs. We had been waiting a long time for this type of spontaneous, lively, new, and surprising cuisine. We were looking for pleasure, emotion, flavours. We’re glad we found it, but now we need to get our addiction under control.
