New Flemish Cuisine


No need to travel thousands of kilometers to feel you’ve gone somewhere new and exotic. Just 30 minutes from Lille you will find the Va et Vient, a veritable jewel of a restaurant nestled in the town of Courtrai since May 2014. Matthias Speybrouck, a talented chef who graduated from the kitchens of Sergio Herman and Kobe Desramaults, provides a creative local cuisine, both pure and refined. The urban decor in this very attractive and relaxed restaurant matches perfectly Speybrouck’s interpretation of contemporary Flemish cuisine, with regional products showcased handsomely in what was once a large linen warehouse. Here nothing is superfluous; only natural and essential ingredients are presented. Diners are challenged with a riddle of flavours and textures, with each dish a delight to the eyes. Each meal is a delicacy, precise and perfectly balanced. A good number of aperitifs and a great wine list round out your beverage choices. At lunch time the menu includes two set meals to choose from, while in the evening there are a number more. Weather permitting, a brand new terrace offers you the chance to dine along the Lys River. There is no doubt that this is an address you will find yourself returning to many times!
